I still have scallions left over, so I added a bunch to barbecue sauce and added some sriracha and a small shake of sugar and made a delicious coating for the chicken! As always, broccoli and fresh garlic are a favorite and I made that as the side!
What You Need:
2 chicken breasts.
3 scallions.
1 cup-2 cups bbq sauce.
1/2 teaspoon cumin.
1/2 teaspoon chili powder.
1 teaspoon sugar.
salt and pepper to taste.
1 teaspoon or more if needed for broccoli.
1 clove fresh garlic, crushed.
Begin by pre heating the grill to 350°. Clean up the chicken breasts by cutting off excess fat. Lightly coat both sides of the chicken with salt and pepper. Clean and cut scallions into small pieces.
Melt butter in a pan and add broccoli. Cook on low medium and check often. Broccoli should take about 15 minutes. Add in a clove of fresh garlic at the end of cooking and set aside.
In a medium bowl, mix together bbq sauce with sugar, chili powder, cumin, salt and pepper, add in your scallions and mix well. Grill chicken one side for about 5 minutes before basting with sauce. Flip and repeat. Cook chicken until it is white throughout. Serve with broccoli and enjoy!
