Panko Fried Tilapia with Chips and Broccoli


Take a look at the tags for oven fries and broccoli.

What You Need:
4 Tilapia filets
About 1 cup of Flour
2 eggs
About 1/2 cup Panko bread crumbs to mix with the flour
Salt, pepper, old bay
Tartar Sauce
Lemon

First I started my oven fries, followed by the broccoli. The fries will finish in time and be able to sit and cool while the fish are frying.

Crack 2 eggs in a medium bowl and season with salt and pepper.
In a large bowl, mix your flour and panko bread crumbs together and season with salt, pepper and old bay seasoning. Mix it around with your hand until the flour and bread crumbs are evenly mixed, and enough to cover 4 small/medium fillets.
Put about 1 cup of canola oil into a large skillet, and wait until the oil heats up; the oil becomes almost thin looking, and more fluid with movement.
Place 1 Tilapia filet into the egg, coat thoroughly, and dip into the flour/panko, cover entirely, and then add to the hot oil. Repeat this step 3 more times for each filet.
All four of your filets should now be frying nicely in the oil. Let them sit before flipping for about 5 minutes, then flip.  In total time to fry the fillets is about 15 minutes. As the fillets cook, the color on the breading will become a light golden brown. Also, when you have flipped the fillets about 3 times, you will notice them to start falling apart a bit. This means they are done, or remove one from the pan, if the fish flakes with the fork they are ready!

Serve on toasted white bread to make a sandwich or serve on a plate with tartar sauce and lemon!
