This is my second time making this recipe! This came out differently than my first attempt. I also think that sun dried tomatoes would be a great addition to this recipe too.
This is the video I used, it is a good video I think to follow if you have never made this dish before. The news casters just ignore but the actual cooking is a good guide line.
What you need:
2 chicken breasts; diced or into bite sized pieces.
3 oz fresh garlic; sliced thin.
1 Cup Vodka.
1 Pint Heavy Cream.
1 (29 oz) can sauce; or make your own fresh!
1 Onion; sliced thin.
2 tablespoons olive oil.
Dash of hot sauce. Optional.
1/2 tablespoon Crushed Red Pepper Flakes.
1 teaspoon garlic powder and onion powder.
1 teaspoon Oregano.
1 teaspoon Basil.
a few cranks from the grinder of sea salt (about 1 1/2 teaspoons).
a few cranks from the grinder of pepper. (about 1 1/2 teaspoons) I used Tellicherry black pepper corns for this recipe.
1 box penne pasta. I used Mezze Penne n.369 from Barilla this time, but Penne Rigate from Ronzoni also works, or whichever you like.
The Red Sauce
Start your sauce earlier, so the sauce has time to cook. I cooked mine for about an hour.
Pour the sauce into a sauce pan, and add in your sliced onion and above spices, low to medium heat, stirring occasionally. Add more spices if needed for flavor.
Boil 1 box of penne pasta. Add in 1 teaspoon of salt to add flavor to your pasta.
Bring the water to a rolling boil, and boil for 10 minutes for al dente. Set aside for later.
The Chicken:
In a large skillet or saute pan;
Start the stove on a low setting, adding olive oil to the saute pan.
Add garlic to the saute pan, cook until the garlic is fragrant. Just a light brown in color. If you over cook the garlic, it will become too bitter to eat.
Next, add in your diced chicken, cook the chicken until it is white throughout, about 5-10 minutes.
Once the chicken is good and cooked, add the vodka and stir.
Some people are skilled enough as to light the vodka on fire, I was not so I did not light the vodka on fire.
After about 5 minuets, add in the red sauce.
Still keeping your stove setting on a low medium setting, add in the heavy cream to make the pink sauce.
Let the sauce cook for at least 10 minuets to thicken, stirring occasionally.
Add the pasta into the sauce and mix well!
Top with Parmesan cheese or whatever you like
Serve it up!
