Snickerdoodles with Pink Strawberry Frosting


The recipe is from Taste of Home Test Kitchen, I added strawberry frosting for a nice touch.

You Will Need:
1/2 Cup Butter softened
1 Cup plus 2 tablespoons Sugar, divided
1 Egg
1/2 teaspoon Vanilla Extract
1 1/2 Cups All Purpose Flour
1/4 Teaspoon Baking Soda
1/4 Teaspoon Cream of Tartar
1 Teaspoon Ground Cinnamon

1. In a large bowl, cream butter and 1 cup sugar until light and fluffy. Beat egg and vanilla. Combine the flour, baking soda, and cream of tartar in a medium bowl; gradually add to the creamed mixture and mix well. In a small bowl, combine the 1 Teaspoon ground cinnamon and 2 tablespoons sugar.

2. Shape dough into 1-in. balls; roll in cinnamon and sugar. Place 2 in apart on ungreased baking sheets. Bake at 375 for 10-12 minutes or until lightly browned. Remove to wire racks to cool.


Tip   To shape dough, roll the dough between your palms until it forms a ball. A 1 in. ball requires about 2 teaspoons of dough. If the dough is sticky, you can refridgerate it until it is easy to handle, lightly flour your hands or spray your hands with cooking spray.

My dough came out pretty sticky, I used a hand mixer instead of mixing by hand for once and I think I may have over mixed or something.
What I did instead of rolling the dough, I used the regular drop cookie technique. I used an icecream scoop and scooped cookie dough amounts onto my greased cookie tray.
Plus I added the cinnamon and sugar into the batter instead of rolling the balls into it.

I grease my cookie tray, even when the recipe says not to. For one reason, my oven runs hot and the second reason is, I have burned a lot of cookies from not greasing, plus what's wrong with a little extra buttery flavor!

I also made sandwiches! Just frost the bottom side of two cookies and squish together!
