Well it was new years eve and I had nothing that was defrosted to eat and celebrate with!
What did I do?
I got out my trusty slow cooker and made an awesome quick meal!
I slow cooked from about 7pm till 11pm and the food was perfect!
What You Need:
1 Slow cooker on HIGH for 4+ hours
1 chicken breast
1 lb ground beef
1 green bell pepper
1 tomato
1/2 sweet onion
Hot sauce
Splash of fajita marinade so the chicken and beef have something to cook in without getting stuck to the bottom or get dried out
Cheddar cheese
Sour cream
Soft Tortillas
Spices: salt, pepper, cumin, chili powder, crushed red pepper flakes, garlic and onion powder
So since both my chicken and beef were frozen, into the slow cooker they go!
Add your splash of fajita marinade--or whatever you want, hot sauce works well enough. You only want to use enough to lightly coat.
Slice up onion and pepper and toss them in with the chicken and beef!
Chop a bit of tomato and add to the slow cooker, save the rest to top off your buritto!
Add in your spices, I would say about 3 tablespoons each should do it, add more as you go along to your personal liking.
Allow this to all sit for about an hour. Once the hour has passed, remove just the chicken breast and slice off the fatty parts and toss back into the slow cooker for the remaining time.
Once the 4 hours have passed, drain out the grease and remove portions with a slotted spoon and serve!
Garnish with cheddar, tomatoes and sour cream or whatever else you like!
Don't forget to get out a special drink for new years!
