Perfect grilling weather, brings great opportunities to make great dinners! Friday night was Tilapia, and everything came out perfectly tender.
I cheated this time with my fries and just used frozen crinkle style instead of making oven fries-which are one of my favorites. Asparagus as the green side, which is my second favorite from broccoli and the asparagus was a good price. Lastly, but the main course of the meal were the Tilapia, I used 8 frozen and then thawed Baltimore Crab Company brand, and they always come out excellent!

What You Need:
8 Tilapia filets.
1 Bunch of asparagus.
Frozen fries-enough for two people.
1 lemon.
Tarter sauce.
About 1 Tablespoon butter; enough to sautee asparagus.
About 1/2 teaspoon of each salt, pepper, paprika and old bay seasonings.
Pre heat your oven to package directions for the fries; mine was 400°
Melt your butter in a large sautee pan, be sure to cut off the ends of the asparagus and add to pan.
allow the asparagus to cook for at least 10 minutes before pre heating grill and grilling your Tilapia, since it will be done very quickly.
The fries should take 15-20 minutes, as will the asparagus. Once 10 minutes has passed, pre heat your grill to 400°
Prepare the Tilapia by spreading the filets out on a cutting board, and patting quickly with a paper towel. Patting or blotting the filets, will remove some unwanted oils but not all of the oil. It will also remove the often, fishy smell you get from making fish. Luckily, Tilapia is not a very strong smelling fish so there is no need to worry!
Slice up some lemon to serve on top of the fish, or on the side! It adds excellent flavor to the fish, as well as the fries!
Season the Tilapia with some salt, pepper, paprika and a little old bay seasoning on both sides. Enough to lightly dust.
Start the grill and keep the burners on medium in the front and high on the back, but keep an eye on that temperature! No higher than 400° for the filets.
Spray the grill with oil, butter or anything that will prevent sticking, as the filets are thin and will stick extremely easily and fall apart with a flip.
Give the filets about 10-15 minuets, flipping 2-4 times. The fish will be done when it is white throughout and flakes easily with a fork.
Don't forget your wonderful lemons! I love putting lemon on everything in this meal!
