Chicken Fajitas!




What You Need:
4 chicken breasts
1 bell pepper
1 onion
2 pickeled or non pickeled habeneros
1 can of black beans drained and rinsed
1 or 2 cups of rice
1 cup of cheddar cheese shredded
2 cloves fresh garlic, sliced thin or crushed
Flour Tortillas
Seasonings:  fresh garlic, salt, pepper, cumin, chili powder, crushed red pepper flakes
Sour cream and hot sauces optional, but I suggest using sour cream always!
Cheddar cheese about a cup or more depending on how cheesey you want your fajita
Canola oil for frying chicken
2 tablespoons extra virgin olive oil/olive oil for your beans
Little slab of butter for your onions and peppers



Start by rinsing/soaking off your rice in a bowl to remove the white powder from them to make a fluffier rice and a better taste. Then boil 2 cups water and add in your 1 cup rice.Season your rice with cumin, salt and pepper. Stir rice and check often so the rice isn't sticking to the bottom of the pan!
Next slice up your onion and bell pepper to your liking and saute in a pan with butter until they are nice and soft. Add in your sliced garlic. Keep an eye and stir every 5-8 minutes.
While your onions, peppers, and rice are cooking drain and rinse your black beans, add your olive oil into a small pan and heat until the beans are easily mash able(refried beans texture almost). Season with some cumin, pepper, chili powder, crushed red pepper flakes. Stir often to make sure the beans don't stick to the bottom of the pan!
Now that 3/4 of your stove burners are all in use, were adding one more pan to the stove!
Slice up your chicken into bite sized pieces, or larger depending on how you like them. Season with salt, pepper, cumin. Add canola oil to the pan and heat the chicken until thoroughly cooked, white all the way through. Add in your whole 2 habeneros with a bit (about 2 tablespoons) of the pickled juice for added heat! The chicken takes about 15 minutes or more depending. Stir and check frequently every 5-8 minutes. Every time you stir the chicken, give everything else a stir.
noThere is no such thing as a medium done chicken!

Shred or slice up your cheddar cheese and set aside
Get out your hot sauces and tortillas.
Warm the tortillas in the microwave or stove or oven or however you please before serving for a nice soft warm dinner!
