Grilled Steak Fajitas with home grown hot banana peppers!


My London boil is still defrosting, soon I will run to the store and get a green bell pepper, an onion and tortillas!
It has been too long since I have had a steak fajita! Beef burritos are tasty and all, we had those the other night and I forgot to take pictures before everything was gone!

1 London broil
Teaspoon salt
Teaspoon pepper
Teaspoon chili powder
Teaspoon cumin
Teaspoon crushed red pepper flakes
a few drops of Texas Pete Hotter Hot Sauce
a yellow onion
a green bell pepper
2 larger hot banana peppers
About 2 tablespoons butter or a bit more if you need it for the vegetables
1 cup of cheddar shredded
sour cream
hot sauce on the side

I have started the London broil on the grill. It is seasoned with salt, pepper, cumin, chili powder, and crushed red pepper flakes. On both sides. About a teaspoon of each spice. Salt and pepper you want to coat as evenly as you can on both sides of the steak and on the fat. There is not a lot of fat on this piece I am using today. To cook the steak it will take about twenty to twenty five minutes. 350° Cooking the steak for ten minutes on both side. 

Cut up your green bell peppers de seed them and rinse well. The yellow onion can be diced or sliced thin depending on your preference. The hot banana pepper can be sliced lengthwise, the seeds can be removed or just keep a few in for the heat. Cut into small pieces.
On the stove, add a tablespoon or more of butter keep the heat on a 3-4 but stir often. I have my green bell pepper sauteing in butter along with my whole yellow onion and two fresh picked hot banana peppers, I left a half seeded in the vegetable mix. Added a few drops of Texas Pete Hotter Hot Sauce. This should only take about fifteen minutes to cook and soften the vegetables.
Once your vegetables have cooked until perfect softness, and the steak is well done allow the steak to rest for about ten minutes. Once the steak has rested, slice thin and serve on tortillas. Serve with sour cream, cheddar, hot sauce or anything else you would like on the side and enjoy!
