When you have too much chili and need something to do with it, add it to an omelet why not! Add cheese too, you have got to add the cheese! For this recipe, I cooked enough for my husband and I.
What You Need:
4 eggs.
4 slices of "processed" cheese or more...I cheated this time and used and also had the pre sliced American cheese on hand this particular week...this will probably never happen again with the "processed" cheese being in a recipe of mine. Cheddar is always preferred and in block from.
Chili for your omelet. I used about 1 cup 1/2.
salt and pepper for taste.
1 teaspoon butter for cooking the eggs in.
Begin by cooking your chili in the microwave for about 4 minutes. Once heated, set asside.
Whisk together 4 eggs in a bowl and season with salt and pepper.
Add butter to the pan, allow it to melt and then add in your eggs. Cover the eggs. Leave the eggs and pan flat and do not flip your eggs until the bottom is plenty cooked enough, or once your spatula can lift the solid egg off the bottom of the pan without the eggs running horribly. A little running egg is okay, but not a horribly running egg. Once you have flipped the omelet over safely add your chili and spread evenly over the cooking omelet. Cook with the cover on for a few minutes. Then, uncover, add cheese and allow it to melt a bit before flipping one side of the omelet to meet the other side, making a nice little half smiling round pocket.
After about 2 minutes, flip the heavy omelet over and allow it to cook on that side for another 2 minutes or so until the omelet is of your liking. Note that at this time some cheese and chili may shift, and squeeze out of the omelet, it's alright, simply fry it on the side and top the finished omelet with fried cheese and chili goodness.
At this point you should be done with cooking and enjoying! Split your omelet into two as even half as you can and eat!
