The mixture of chicken, pineapple and shrimp is a very tasty meal indeed, especially when it is on the grill! Add a bit of bbq sauce on top and you are set!
What You Need:
1 pound shrimp. Easy peel.
1-2 cans of chunked pineapple, drained and rinsed of juice.
3-4 chicken breasts, cut in cubes.
Package of skewers.
1 cup bbq sauce.
Well this is a pretty easy recipe. Drain and rinse your pineapple. Drain and rinse shrimp, prepare shrimp to package direction depending on what kind you have. Clean up chicken and cut off any unwanted parts.
Cube chicken into bite sized pieces.
If you are using bamboo skewers, you may want to soak them in water for at least 30 minutes before using them, allow them to dry on paper towels.
Prepare bbq sauce in a bowl on the side. Add some hot sauce and a bit of sugar to the bbq sauce to give it a nice zing! Now the easier part, basically, you want to alternate chicken, shrimp, and pineapples on the skewers.
Heat up the grill and once it is up to at least 350°, use some non stick spray, and place full skewers on the grill! Be sure to rotate the skewers often, give them about 5 minutes per side. My husband did the turning of the skewers on this one. Once the chicken is cooked it will be white all the way through and the shrimp will be pink.
