Chicken Po Boy with Asparagus


Fried chicken on a steak roll, smothered in a spicy mayo sauce....cool


What You Need
For your green side
1 Bunch of asparagus or any green side of your choice
3 cloves fresh garlic, crushed in a garlic press
2 tablespoons butter to saute your asparagus

For the Chicken Po Boy
Steak rolls, sliced and warmed
2 chicken breasts sliced into medium thick strips
1 Head of red cabbage
Splash of white vinegar for the cabbage
3 eggs, whisked and seasoned with salt and pepper
 2 cups Panko bread crumbs, seasoned or unseasoned (I used a mix)
2 cups all purpose flour, to mix with your panko bread crumbs
salt, pepper, crushed red pepper flakes, chili powder, onion and garlic powder, cyanne pepper
About 2 cups of canola oil for frying

For the Po Boy Mayo to top the sandwich off with
6 tablespoons mayo
sriracha--I used a bunch of squeezes from the bottle---maybe a 1/2 cup? To taste for your personal likingyou don't want to taste a lot of mayo with this sauce.

Lets begin


Start by cleaning and cutting off the ends of the asparagus and adding your butter to the pan, allow it to melt fully before placing the asparagus. Keep the heat on a low medium setting a 2-3 keeping an eye and stirring occasionally  Asparagus has a lot of water in it and will steam itself and continue to keep moist while sauteing.
Slice and dice up your cabbage and add a splash of white vinegar, let it sit in the fridge for about a half hour.
Satue your diced onions and cabbage in some oil, until they are soft, leave on low heat until ready to serve. Add some salt and pepper to taste.
Heat up your 2 cups of oil. Trim your chicken breasts as needed. Once the oil is heated enough, it will be very liquid as you swirl the pan to test.
Mix flour and panko together in one large bowl add in salt, pepper, crushed red pepper flakes, chili powder, onion and garlic powder, cayanne pepper--go extra on the cayanne pepper for more flavor
Mix your egg in a separate smaller bowl
Dip chicken strips once in egg, flour/panko, egg, flour/panko and into oil. Repeat this until all of the chicken is breaded.
Fry the chicken until the outside is a dark brown if you want it very crispy, or a light golden brown.
While the chicken is  frying, make your mayo and sriracha sauce!
