Fresh Bruschetta


Fresh bruschetta is wonderful to eat, as well as easy to make! I will say that the time to make is about 15 minutes or so. 

What You Need
2 large tomatoes, skins removed
3-4 cloves fresh garlic crushed or sliced thin
about 2 Tablespoons olive oil
1/4 teaspoon salt
1/4 teaspoon pepper
about 4 fresh basil leaves, or just use dried basil
about 2 fresh oregano leaves, or a few pinches of dried oregano
​french bread to serve

Start by boiling enough water to completely cover the tomatoes. While you are waiting for the water to boil, core the tomato by cutting around the stem with your knife, and then slice a small and short line down both sides of the cored area. The line should only be about an inch or so. Place tomatoes in a bowl. 
Once the water has come to a boil, pour water over the tomatoes and allow about 5 minutes for the skin to start peeling off. Once the skin has started to peel, run cold water into the bowl, and dump out the hot so you can easily remove the tomato and peel off the rest of the skin. Place on a cutting board.
​Now all you have to do is dice the tomatoes into bite sized chunks, it will be juicy so just add that into another bowl. Now that you have done that, it's time to add some flavors! Yay! Un peel and crush/slice garlic cloves. 
OK add in olive oil, salt, pepper, oregano, basil and crushed garlic to the tomatoes and mix well. 
​Looks and smells pretty good doesn't it? Well it is!  Now, slice your french bread and top with your new bruchetta! Toast in the oven until lightly browned, even add some cheese on top! Mozzarella works perfect! Just make sure to salt and pepper both sides of the mozzarella before putting on top of the bruchetta!
