Simple Vanilla Cupcakes with Peanut Butter Frosting


My cupcakes came out a bit more dense than I wanted, not very fluffy, or tall, but they were still good with a tall glass of milk!
This is where I found this recipe.


For the Cupcakes:
cups flour
1/2 teaspoon salt
teaspoons baking powder
1/2 cup butter, softened
3/4 cup sugar
eggs
cup milk
teaspoon vanilla essence (optional)
Preheat oven to 375;  line muffin cups with papers.
Cream together butter and sugar until it's  light and fluffy, Beat in your eggs one at a time, mixing well.
Mix together your flour, baking powder and salt, then alternating with milk and flour mixture, mix everything in together, beat well; stir in vanilla last.
Divide evenly among pans and bake for 20 minutes. Let cool in pans.

For the Peanut Butter Frosting
1/3 cups powdered sugar OR use regular granulated sugar, add to a blender and blend until the sugar becomes very fine=powdered sugar!
1/3 cup milk
1 cup creamy peanut butter
1/2 cup butter, softened
Cream together peanut butter and butter until light and fluffy. Add powdered sugar. Slowly add milk until frosting is at desired spreading consistency

Complete icing! A little movement, once in the fridge, it will thicken and be easier to spread on the cupcake!
